Springtime Lemon Bars

1/2 cup butter softened (1 stick)
1 cup +2 tbsp flour divided
1/2 cup confectioner’s sugar, plus more for dusting
2 eggs, beaten
1 cup granulated sugar
1/4 tsp salt
4 tbsp lemon juice
1/2 lemon zested
1/2 tsp baking powder
Thinly sliced strawberries

  1. Preheat oven to 350*F, In a large bowl combine butter, 1 cup of flour ad confectioners sugar. Press greased 8×8 inch dish and back 20 mins
  2. Meanwhile, in a medium bowl combine eggs with sugar, salt, lemon juice and zest. In small bowl mix baking powder and remaining 2 tbsp flour. Add dry mixture to the egg mixture and combine well.
  3. Carefully remove dish from oven. Pour egg mixture over top and bake 25 mins longer. Allow to completely cool before cutting into bars. Sprinkle with confectioners sugar and arrange strawberry slices on each. Enjoy!!!

French Toast Casserole

Ingredients:

1 loaf French bread (13 to 16 ounces)
8 large eggs
2 cups half-and-half
1 cup milk
2 tablespoons granulated sugar
1 teaspoon vanilla extract
1/4 teaspoon ground cinnamon
1/4 teaspoon ground nutmeg
Dash salt
Praline Topping, recipe follows
Maple syrup

Praline Topping:

1/2 pound (2 sticks) butter
1 cup packed light brown sugar
1 cup chopped pecans
2 tablespoons light corn syrup
1/2 teaspoon ground cinnamon
1/2 teaspoon ground nutmeg

Directions

  1. Slice French bread into 20 slices, 1-inch each. (Use any extra bread for garlic toast or bread crumbs). Arrange slices in a generously buttered 9 by 13-inch flat baking dish in 2 rows, overlapping the slices. In a large bowl, combine the eggs, half-and-half, milk, sugar, vanilla, cinnamon, nutmeg and salt and beat with a rotary beater or whisk until blended but not too bubbly. Pour mixture over the bread slices, making sure all are covered evenly with the milk-egg mixture. Spoon some of the mixture in between the slices. Cover with foil and refrigerate overnight.
  2. The next day, preheat oven to 350 degrees F.
  3. Spread Praline Topping evenly over the bread and bake for 40 minutes, until puffed and lightly golden. Serve with maple syrup.

Praline Topping:

  1. Combine all ingredients in a medium bowl and blend well. Makes enough for Baked French Toast Casserole.

Attitude Adjustment Almonds

INGREDIENTS

  • 1 C. Sugar
  • 1 C. Brown Sugar
  • 3 Tbsp. Cinnamon
  • ⅛ tsp. Salt
  • 1 Egg White
  • 2 tsp. vanilla
  • 3 Cups Almonds
  • ⅛ C. Water

INSTRUCTIONS

  1. Mix together in a large bowl sugars, cinnamon, and salt.
  2. In another bowl with a whisk, mix together the egg white and vanilla until it is frothy. Add the almonds and coat thoroughly. This will help the mixture stick to the almonds during the cooking process.
  3. Prepare your slow cooker by spraying it with cooking spray. I used a 4 quart. Add the cinnamon almond mixture to the almonds and turn it to low. Stir until the cinnamon sugar mixture is coated well on the almondsBe prepared for your house to smell amazing!
  4. You want to cook for about 3-4 hours. Mine took about 3. Stirring every 20 minutes. In the very last hour, add ⅛ cup water and stir well. This will ensure a crunchy coating and help the mixture to harden.
  5. Line a baking sheet with parchment paper and spread the almonds onto the sheet to cool. The almonds should be pretty sticky so be sure to seperate them the best that you can and let them cool!

Heads up, your almonds may be very dark and clump together. Just spread them out and try to unclump them as best as possible and let them cool.

Green Tea Ice Cream

1 Pint of Vanilla Ice Cream
1 Tblsp. Matcha (Green Tea) Powder
*1 Can of Sweetened Red Beans (Azuki)
*Optional, depending on how Japanese you wanna be.
1. Blend ice cream and green tea powder together.
2. Freeze in plastic container for 30 minutes.
3. Serve in chilled bowl with the sweetened red beans on top.

2 oz. Cinnamon Whiskey (80 proof or higher)**
1 oz. Cranberry Juice
1. Stir ingredients with ice in a shaker.
2. Grab a chilled martini glass.
3. Strain drink into glass.
4. Light liquid on fire.
5. Drink Responsibly.
